CHICKEN BROCCOLI CASSEROLE 
3 lb. frying chicken
2 (10 oz.) pkgs. frozen broccoli or 2 bunches fresh broccoli
1 c. mayonnaise (low fat)
2 (10 3/4 oz.) can condensed cream of chicken soup
1 tbsp. lemon juice
1/2 c. grated Cheddar cheese (low fat)
1/2 c. bread crumbs
1 tbsp. melted butter

1. Stew chicken; cool and bone.

2. Steam broccoli until tender; drain.

3. Grease an 11x7 inch casserole. Place chicken on the bottom, broccoli on top.

4. Combine mayonnaise, soup and lemon juice. Pour over broccoli.

5. Sprinkle with a mixture of cheese and bread crumbs combined with butter.

6. Bake in a 350 degree oven for 30 minutes. Serves 6.
