PANCAKES OR WAFFLES 
2 eggs, slightly beaten
1 1/4 c. all-purpose flour
3/4 c. Malt-o-Meal
1 tbsp. baking powder
1 tbsp. sugar
1 tsp. baking soda
1 tsp. salt
2 c. buttermilk or sour milk
2 tbsp. vegetable oil

In large mixing bowl, combine all ingredients; stir together until all ingredients are moistened and batter is smooth. Bake on hot griddle. Approximate yield is 8 pancakes. For waffles, use recipe for pancakes and increase baking powder to 4 teaspoons; sugar to 2 tablespoons; omit baking soda; increase vegetable oil to 1 cup. Bake in greased waffle iron. Approximate yield is 8.
