CHEESE BROCCOLI CASSEROLE 
2 pkgs. frozen chopped broccoli
1/2 c. chopped onions
6 tbsp. butter
2 tbsp. flour
1/2 c. water
Salt to taste
1 (8 oz.) jar processed cheese spread or 8 oz. grated Cheddar cheese
3 eggs, well beaten
1/2 c. cracker crumbs

Thaw broccoli and drain well. Saute onions in 4 tablespoon butter. Stir in flour and add water. Cook over low heat until mixture thickens and comes to boil. Add salt and blend in cheese. Combine sauce and broccoli. Add eggs and mix gently until blended. Turn into greased 1 1/2 quart casserole. Top with crumbs and dot with remaining butter. Bake at 350 degrees for 1/2 hour. 8 servings.
