CHICKEN LOCA | |
1 lb. chicken cuts (any parts) 6 pieces big potatoes, cut into diced 1 small can 235 grams pineapple chunks 2 large carrot, cut into diced 1 pack 320 ml sweet style tomato sauce 1 white onion, chopped 4 garlic cloves, chopped 1 red pepper, diced salt and pepper to taste 2 tbsp. olive oil 2 cups water Saute garlic, onion and chicken cuts. Let it simmer for 10 mins until chicken is tender. Add the sliced tomatoes, carrots and pineapple. Saute. Add 2 cups water and let it simmer until vegetables and chicken are tender. Pour in the tomato sauce and wait until the sauce is thick. Put salt, red bell pepper and black pepper to taste. Serve with rice. Makes 6 servings Submitted by: Shayne Koepf |
