CHERRY ALMOND MUFFINS 
2 c. all purpose flour
1/2 tsp. salt
1/4 c. granulated sugar
2 tsp. baking powder
2 lg. eggs, lightly beaten
1/2 c. (1 stick) sweet butter, melted and cooled
3/4 c. milk
1 tsp. vanilla extract
1 c. (4 oz.) almonds, coarsely chopped
1 c. (4 oz.) Cherry De-Lite
Finely grated rind of 1 lemon

Preheat oven to 400 degrees.

Lightly grease muffin pans. In a large bowl stir together flour, salt, sugar and baking powder. In another bowl, combine eggs, butter, milk, vanilla and mix well. Pour egg mixture into dry mixture, add almonds, cherries, lemon rind and stir until just blended. Spoon batter into greased muffin pans. Bake for 20 minutes until golden.
