ZUCCHINI CASSEROLE 
1 c. zucchini, sliced thin
1 c. onion, sliced thin
2 oz. cooked ground turkey
1 oz. ricotta cheese (low-fat)
1 oz. mozzarella cheese (part skim)

In saucepan: 1/2 tsp. parsley flakes 1/4 tsp. onion salt 1/4 tsp. garlic salt

Simmer for 30 minutes until seasonings absorb. Cook zucchini, onion and ground turkey until tender. Place 1/2 in casserole, top with 1/2 sauce, dot with ricotta. Add other 1/2 mixture and sauce, top with mozzarella. Place in oven until cheese melts, 10 minutes +. Serving size 1.
