EGGS FRANCOIS 
2 tbsp. butter
2 c. grated Cheddar cheese
12 eggs
2/3 c. whipping cream
2 lbs. mild Italian sausage (browned and drained)
Salt and pepper to taste
1/2 green pepper, chopped

Spread bottom of 10x13 pan with butter.

Sprinkle 1 cup of the Cheddar over the butter. Crack eggs in a dish and break yolks. Add mushrooms, salt and pepper, and green peppers. Pour whipping cream over all and layer sausage on top. Add remaining cheese. Bake uncovered 50 minutes at 350. GREAT FOR BRUNCH!
