APPLE MUFFINS 
1 egg
1/2 c. milk
1/4 c. oil
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1/2 tsp. cinnamon
1 c. grated raw apple, unpared

TOPPING:

2 tbsp. soft butter
1/4 c. brown sugar
2 tbsp. flour
1 tsp. cinnamon
1/2 c. chopped nuts

Beat egg with fork. Stir in milk, oil and apple. Blend dry ingredients; stir in egg mixture just until flour is moistened. Do not over mix. Fill muffin cups 2/3 full. Sprinkle tops with crunchy topping. Bake 25 to 30 minutes.
