APPLE MUFFINS 
1 egg
1/2 c. milk
1/4 c. salad oil
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1/2 tsp. salt
1 c. chopped apple
1/2 tsp. cinnamon

TOPPING:

1/3 c. brown sugar
1/3 c. broken nuts

Grease bottoms of 14 muffin cups. Beat egg. Stir in milk, oil and apple. Mix in flour, cinnamon, sugar, salt and baking powder. Batter is lumpy. Fill cups 2/3 full. Sprinkle on topping. Bake at 400 degrees for 20-25 minutes.
