YELLOW SQUASH CASSEROLE 
1 stick butter
2 full cups squash sliced, cooked, and drained
1 c. shredded carrots
1 med. onion, chopped
1 c. sour cream
1 can cream of mushroom soup
1 sm. can mushrooms
1/2 brick cheddar cheese, shredded
1 c. crushed pecans
8 oz. seasoned stuffing mix

Melt butter in 9 x 12 baking dish. Mix carrots, onion, sour cream, mushroom soup, and mushrooms. Spoon into baking dish. Add layer of squash, then cheese, then nuts; sprinkle crushed stuffing mix over top. Bake at 350 degrees for 40 minutes.
