YELLOW SQUASH CASSEROLE 
1 stick butter
2 full c. cooked and drained squash
1 c. shredded carrots
1 med. onion, chopped
1 c. sour cream
1 can cream of mushroom soup
1 sm. can mushroom pieces
8 oz. seasoned stuffing mix
8 ox. cheddar cheese, shredded
1 c. crushed pecans

Reserve 1 cup stuffing mix for topping. Melt butter in baking dish. Mix remaining ingredients except nuts, squash, cheese, and 1 cup of reserved stuffing mix in a large bowl.

Spoon into baking dish. Add layer of squash, then cheese, then nuts; sprinkle crushed stuffing mix over top. Bake at 350 degrees about 40 minutes.
