YELLOW SQUASH CASSEROLE 
1 stick of butter
2 full c. squash, slivered, cooked, and drained
1 c. shredded carrots
1 med. onion, chopped
1 c. sour cream
1 can cream of mushroom soup
1/2 sm. can of mushroom bits and pieces
8 oz. seasoned stuffing mix
1/2 brick cheddar cheese, shredded
1 c. crushed pecans

Remove 1 cup stuffing mix for topping. Melt butter in baking dish. Mix remaining ingredients except nuts, cheese, and 1 cup stuffing mix in large bowl. Spoon into baking dish.

Add layer of squash, then cheese, then nuts, and sprinkle crushed stuffing mix over top. Bake at 350 degrees about 40 minutes.
