COOL LIME PIE 
1 sm. pkg. reg. vanilla pudding and pie filling
1 sm. pkg. lime Jello
2 c. water
1 1/2 tsp. grated lime rind
2 tbsp. lime juice
3 1/2 c. thawed Cool Whip
1 fresh lime
9 inch chocolate crumb crust

Combine pie filling, Jello, water and sugar in saucepan. Cook and stir over medium heat until mixture comes to a full boil. Add lime rind and juice. Pour into bowl and cover. Refrigerate until cold and slightly thickened. Fold in 2 1/2 cups Cool Whip. Spoon into crust. Freeze 1 hour or chill in refrigerator for 3 hours. Garnish with dollops of Cool Whip. Slice thin slices from lime. Cut each slice into quarters. Place 3 sliced pieces, point down in each Cool Whip dollop.
