CAWS POBI 
8 oz. strong cheddar cheese
1 tbsp. butter
2 tsp. Worcestershire sauce
1 level tsp. dry mustard
2 tsp. flour
4 tbsp. beer (or milk)
Shake of pepper
4 slices bread, toasted only on one side

Put cheese, flour, mustard, Worcestershire sauce, butter and pepper in saucepan. Mix well, then add beer or milk to moisten. Stir over gentle heat until melted. When it is a thickish paste, stop stirring and swivel it around saucepan which it will do easily.

Toast bread on one side only. Spread rarebit on untoasted side and brown under hot grill. "Buck Rarebit" is Welsh Rarebit served with a poached egg on top.
