BEEF STROGANOFF 
2 lbs. sirloin tips
4 tbsp. butter
2 tsp. salt
1/8 tsp. pepper
1 clove garlic
1 c. tomato juice
1 pt. sour cream
1 lg. can mushrooms
1 can mushroom soup
1 pkg. noodles

Heat fry pan to 400 degrees. Brown mushrooms in 2 tablespoons butter and remove. Brown meat in remaining 2 tablespoons butter. Stir constantly for about 4 minutes. Add finely chopped garlic to cup of tomato juice and pour over meat. Place lid on pan leaving vent open. When it steams turn down to 225 and simmer for 40 to 50 minutes. Meanwhile, combine 1 can mushroom soup, sour cream and browned mushrooms, salt and pepper. Add mixture to the meat at the end of the cooking time. Stir and heat, but do not boil.
