BEEF STROGANOFF 
1 1/2 - 2 lbs. beef tenderloin tips
1 lg. onion, chopped
8 oz. fresh mushrooms
3-4 cloves garlic, chopped fine
1/8 tsp. black pepper
1/2 tsp. salt
3 tbsp. butter
3 c. beef broth
1 c. red wine
1 c. sour cream

Dip meat in flour and brown in hot fat in skillet. Add chopped onion and saute until onions are clear. Add fresh mushrooms and other ingredients. Add beef broth and wine. Simmer until meat is tender.

Shortly before serving add sour cream and heat through. Serve on 3 cups fluffy rice or buttered noodles. Parmesan cheese may be sprinkled over the noodles before serving for a subtle taste.
