1 lb. hamburger
1 1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
3/4 c. Bisquick baking mix
1 1/2 c. milk
3 eggs
2 tomatoes, sliced
1 c. shredded cheese (Cheddar or process American cheese)

Heat oven to 400 degrees. Grease 10 x 1 1/2 inch pie plate. Cook and stir beef and onion in 10-inch skillet until beef is brown, drain. Stir in salt and pepper, spread in plate. Beat Bisquick, milk and eggs with wire whisk or hand beater until almost smooth, about 1 minute. Pour into plate.

Bake 25 minutes. Top with tomatoes and cheese. Bake until knife inserted in center comes out clean, 5 to 8 minutes. Cool 5 minutes. Garnish with lettuce. Serves 6-8.
