1 lb. lean ground beef
1 1/2 c. chopped onion
1/2 tsp. salt
1/4 tsp. pepper
1 1/2 c. milk
3/4 c. Bisquick baking mix
3 eggs
2 tomatoes, sliced (optional)
1 c. shredded Cheddar or American cheese

Heat oven to 400 degrees. Grease or spray 10 x 1 1/2 inch pie plate.

Brown meat and onion. Drain off fat. Stir in seasonings. Spread in greased pan. Beat milk, baking mix and eggs together until smooth, about 1 minute with hand beater. Pour over ground beef. Bake 25 minutes. Top with tomatoes and sprinkle with cheese. Bake 5 minutes longer. Cool 5 minutes. Serves 6-8.
