MEXICAN QUICHE 
1 (9") pie shell, baked
6 thin slices of ham
1/4 lb. baby Swiss cheese, grated
1/2 onion, chopped
1 tomato, chopped
3 (or less) jalapenos, chopped
4-5 strips cooked bacon, crumbled
Dried parsley
1/4 lb. sharp Cheddar cheese, grated

CUSTARD:

4 eggs
1 tsp. dry mustard
1 c. whipping cream

Heat whipping cream and add gradually to eggs. Start with ham and layer 1/2 of all ingredients, making the Swiss with Cheddar cheeses last. Repeat. Pour custard mixture, jiggling pan to settle mixture. Sprinkle with nutmeg and parsley on top. Cook 30-40 minutes at 450 degrees. Serves 12.
