DIXIE STYLE POTATO SALAD 
10 med. potatoes
1 c. chopped onions
3 boiled eggs, chopped
1 bell pepper, finely chopped
1/4 c. minced celery
1/2 c. sweet pickles
2 tbsp. chopped olives
1 to 1 1/2 c. mayonnaise
Salt and pepper to taste

Boil potatoes in their jackets in salted water until just tender, about 30 minutes. Peel and slice or dice them. Blend in all ingredients, except salt and pepper, and enough mayonnaise to bind the salad together. Use a wooden fork and spoon, lifting and folding the potatoes as gently as possible. Salt and pepper to taste.
