STRAWBERRY-WALNUT BREAD 
2 c. finely chopped walnuts
3 c. all-purpose flour
1 tsp. baking soda
1 1/2 tsp. ground cinnamon
1 tsp. ground cardamom
1/2 tsp. salt
1/4 tsp. ground nutmeg
4 beaten eggs
2 c. sugar
1 1/2 c. mashed strawberries (about 3 c. whole berries)
1 c. mashed banana
1 c. cooking oil
1 tbsp. finely shredded orange peel

Grease and flour two 9 x 5 x 3 inch loaf pans; sprinkle 1/2 cup nuts in the bottom of each pan. In large bowl stir together flour, baking soda, cinnamon, cardamom, salt, and nutmeg. Combine remaining ingredients; add to dry ingredients. Stir just until moistened. Stir in remaining nuts. Spoon batter into prepared pans. Bake in 350 degree oven 1 hour. Let cool in pans 10 minutes. Remove to rack to cool. Makes 2.
