GRAPEFRUIT MERINGUE | |
2 grapefruits 2 c. milk 3 egg yolks, beaten 4 tbsp. sugar 3 tbsp. cornstarch 1 tsp. vanilla 3 egg whites 6 tbsp. sugar Prepare grapefruit by cutting in halves, remove fruit and pulp. Drain fruit and discard pulp. Save shells. In a saucepan, scald milk. Beat together egg yolks, 4 tablespoons sugar, cornstarch and vanilla. Combine with milk and cook over low heat until thick, stirring constantly. Cool. Add fruit and place in grapefruit shells. Beat egg whites and 6 tablespoons sugar until stiff. Place on top of grapefruit and broil 1/2 minute or until brown. Serve immediately. |
