CHICKEN AND YELLOW RICE
CASSEROLE
 
1 boiled chicken, deboned
1 pkg. yellow rice mix
1 can cream of mushroom soup
1 c. grated cheese
1/2 c. mayonnaise
1/2 tsp. curry powder
2 slices toasted bread
1 1/2 tbsp. butter

Cook rice according to package. Mix soup, mayonnaise, and curry powder. Crumble toast; mix with melted butter. In casserole dish, layer rice, chicken, and sauce; repeat. Top with cheese and bread crumbs. Bake, uncovered, 20-25 minutes at 350 degrees.
