HOMEMADE RICOTTA CHEESE 
1/2 gallon whole milk
2 sm. heavy cream
1 tsp. salt
1/4 c. white vinegar

Place milk, cream and salt in large saucepan. Cook on medium high heat until mixture comes to a full boil. Immediately remove from heat add the vinegar. Stir. Let cool. Strain through colander. Makes about 1 1/2 pounds of Ricotta cheese.
