MARSHMALLO BANANA BARS 
Cream:

1 c. sugar
1/2 c. shortening

Add and beat well:

1 egg (beat well)
1 1/3 c. mashed bananas
1 tsp. vanilla
1 tsp. baking soda dissolved in 1 tbsp. warm water
1 tsp. baking powder
1 1/2 c. flour

Bake 25-30 minutes at 350 degrees in a 9 x 15 inch jelly roll pan. Remove from oven. Sprinkle 4 to 5 cups of miniature marshmallows on top of bars. Return to oven until they start to puff. Remove from oven and cool slightly and press down to cover bars. Cool and frost.

FROSTING:

2 c. powdered sugar
1 tbsp. butter
1 tsp. vanilla
2 tbsp. or more milk
Yellow food coloring

Spread on the bars. Sprinkle coconut over top and press down slightly. Cut into bars.
