ALL-IN-ONE CASSEROLE | |
6 med. cooked potatoes 6 slices bacon 1/4 c. diced onion 2 tbsp. diced green pepper 1 tsp. salt 1/4 tsp. pepper 6 eggs 1/4 c. milk Dice potatoes. Fry bacon in skillet until crisp. Remove bacon, drain and crumble. Remove all but 3 tablespoons bacon fat from skillet. Add potatoes, onion and green pepper. Season with salt and pepper. Cook until potatoes are golden brown, turning occasionally. Beat eggs lightly with milk. Pour over potatoes. Add crumbled bacon. Stir mixture occasionally until eggs are set. 6 servings. |
