HUCKLEBERRY COFFEE CAKE | |
1 egg 1/2 c. sugar 1 1/4 c. flour 2 tsp. baking powder 3/4 tsp. salt 1/3 c. milk 3 tbsp. melted butter 1 c. fresh berries 2 tbsp. sugar Beat egg, 1/2 cup sugar, milk, and butter. Stir in flour, baking powder, and salt. Fold in berries. Pour into greased 8x8 pan. Sprinkle 2 tablespoons sugar over top. At this point, it can be covered and refrigerated overnight for breakfast baking, or baked immediately. Bake at 350 degrees for 30-35 minutes. |
