MOM'S CHEESECAKE 
12 oz. cream cheese
2 tbsp. rich milk
1 tsp. lemon juice
Grated rind of 1/2 lemon
2 eggs, beaten
Dash of salt
Dash of nutmeg
3/4 c. sugar, divided
1 tsp. vanilla extract, divided
2 c. crushed graham crackers
1/2 c. butter, melted
1 c. sour cream

Let cheese soften at room temperature. Beat with milk. Add lemon juice, rind, eggs, salt, nutmeg, 1/2 cup sugar, and 1/2 teaspoon vanilla; blend. Mix crumbs and butter; press into 9 inch pie pan. Put cheese mixture in unbaked crust and bake at 375 degrees for 20 minutes. Let cool 1/2 hour. Make topping of sour cream, 1/4 cup sugar, and 1/2 teaspoon vanilla. Spread over cool cake and return to 450 degree oven for 5 minutes.
