MARINATED MUSHROOMS 
3/4 c. olive oil
1/3 c. red wine vinegar
1 1/2 tsp. sugar
1/2 tsp. basil
1/8 tsp. thyme
6 peppercorns
1 garlic clove, halved
1 1/2 lbs. mushrooms, halved

Early in the day or day before serving. In a medium skillet over medium heat, combine all the ingredients, except for mushrooms. Cover and simmer for 10 minutes. Stir in mushrooms until coated. Over medium heat, cook 3-5 minutes until fork tender. Remove from heat. Cover and refrigerate. Remove peppercorns and garlic before serving.
