TOMATO - YAM SOUP | |
1 lg. yam, cut up 3 sm. leeks, washed & thinly sliced 2 tbsp. butter 2 (10 1/2 oz.) cans chicken broth 2 lg. tomatoes, sliced or 1 can stewed tomatoes 1/2 tsp. salt (I omit) 1/4 tsp. basil (dried) 1. Saute leeks. 2. Add all other ingredients. Bring to a boil; reduce heat and simmer about 20 minutes. 3. Puree. 4. Return to heat. Heat and serve. Preparation time: 30-45 minutes. |
