TUNA OR CHICKEN BOMBAY 
1 lb. chicken breast (cooked and cubed) (4 to 5 breasts) or 4 sm. cans tuna, drained
3 c. cold cooked rice
2 c. celery, diced
3 green onions, (minced)
Fold in 2 cans mandarin oranges

DRESSING:

1 c. mayonnaise
1 tsp. curry
1 tsp. salt
Dash pepper
Lemon squeeze

Mix and blend with other ingredients. Sprinkle with peanuts and toasted coconut (optional). Serve on lettuce.
