1 1/4 c. sugar
1 1/2 tbsp. flour
1 1/2 tsp. cinnamon
1 1/2 tsp. apple pie spice
6 c. zucchini, cored, peeled and sliced
1 1/2 tsp. cream of tartar

Cook zucchini until tender (about 20 minutes) and drain well. Mix with dry ingredients. Pour into prepared pie shell and bake at 400 degrees for 40-50 minutes.
