PINEAPPLE BARS 
1/2 c. almonds, ground fine
1/4 c. whole wheat flour
1/4 c. water
1 c. granola crumbs

Mix together with a fork in bottom of 9 x 13 inch pan. Press against bottom. Bake 5 to 10 minutes at 350 degrees.

FILLING:

1 1/2 c. apple juice
1 c. dates
2 1/2 c. crushed pineapple
2 tbsp. cornstarch
1 tsp. vanilla
Coconut for topping

Blend water and dates in blender until smooth. Mix together with other ingredients; pour over crust and sprinkle with coconut, then bake at 350 degrees for 15 minutes or until coconut is light brown. Cool well before cutting into desired squares.
