PINEAPPLE LIME MOLD 
1 (3 oz.) pkg. lime Jello
1 c. boiling water
1/2 c. cold water
1 tbsp.lemon juice
1 (8 oz.) pkg. Philadelphia cream cheese
1 1/2 c. small colored marshmallows
2 (8 oz.) crushed pineapple (drained)
1/2 c. chopped nuts
1 pkg. coconut

Mix Jello with boiling water, dissolve, then add cold water and lemon juice. Gradually add cream cheese. Chill until thickened. Fold in pineapple, marshmallows, nuts. Pour into mold or ring, chill until firm. Unmold over coconut, then serve.

DIETITIAN'S NOTE:

Many alterations can be made here. Use sugar free Jello and lite cream cheese. Unfortunately coconut is high in fat, saturated fat at that! Consider omitting the coconut and/or nuts.
