VEGETABLE MEDLEY 
2 c. sliced celery, in one inch pieces, sliced diagonally
1 1/2 c. sliced onion, sliced lengthwise
1 1/2 c. sliced carrots, sliced diagonally
2 c. green beans, fresh, frozen or canned
1 mango, sliced lengthwise
2 1/2 tsp. salt
2 tbsp. tapioca
1 qt. or 1 can tomatoes
5 tbsp. brown sugar
2 tbsp. butter

Put all into a casserole in oven for 2 to 2 1/2 hours or until soft at 350 degrees. Adjust seasoning, if necessary. Slow cooker can be used instead of casserole.
