BAKED RIGATONI WITH 4 CHEESES 
1 lb. rigatoni
1 lb. Ricotta cheese
1 pkg. Mozzarella cheese
1 pkg. fancy Parmesan cheese
2 eggs
1 tsp. parsley
Locatella Romano cheese (1/4 c. + 1 tsp.)
1 lb. ground sirloin
Tomato sauce (see recipe)
Garlic (2 cloves)

1. Boil water in a large pot. Add rigatoni until al dente. Do not over cook.

2. Mix Ricotta cheese with egg and parsley.

3. Mix all cheeses together.

4. Saute ground sirloin with 1 teaspoon oil and garlic.

5. In a large mixing bowl, combine cheeses, meat and rigatoni.

6. Add tomato sauce enough to make pasta moist but not soupy.

7. Spoon into large baking dish, add more sauce and grated cheese.

8. Cook in 350 degree oven for 20 to 30 minutes until firm but not dry.
