5 c. cold mashed potatoes 1/2 c. butter 3 tbsp. confectioners' sugar 2 c. flour 1 tsp. salt Mix together all ingredients, knead with hands to make a soft dough. Divide into 1/3 cup portions, roll out on floured board to make a very thin 14 inch circle. If you have a grooved lefse rolling pin, use it on the last pass to make the grooves in the pancake. Use a lefse stick (a long thin tapered flat stick) to move lefse or roll up on rolling pin. Heat a griddle very hot, spray with no stick cooking spray then add lefse. Cook until it starts to turn brown on the bottom then turn and cook other side. Spread with butter and sprinkle brown sugar on top, fold in half and quarters. Repeat with remaining dough. Serve warm. This is a traditional Norwegian Christmas breakfast. |
