CHEESECAKE TARTS 
24 oz. cream cheese
1 c. sugar
3 eggs
2 tsp. lemon juice
2 tsp. vanilla

Beat cream cheese, then add sugar. Stir well and add eggs, lemon juice and vanilla. Put cupcake liners in cupcake pans and put a vanilla wafer in the bottom of each one. Add about a tablespoon of cream cheese mixture on each vanilla wafer and bake at 375 degrees for 17-20 minutes or until set but not brown. Just before serving top with a teaspoon of cherry or blueberry pie filling.
