ITALIAN CHICKEN 
2 whole chicken breasts, split, boned and skin removed
1 stick butter, melted
1 c. Italian bread crumbs to which have been added:
1 tsp. salt
1 tsp. pepper
1 tsp. rosemary
1 tsp. basil
Romano-Parmesan cheese, grated (to taste)
8-inch square baking pan

Heat oven to 350 degrees. Dip chicken pieces in melted butter, then into seasoned bread crumbs. Place in baking dish and drizzle with remaining melted butter. Sprinkle generously with grated Romano-Parmesan cheese, then with dried crushed parsley. Bake for 1 hour at 350 degrees. Chicken may be prepared ahead, covered well, and refrigerated, or wrapped in freezer paper and frozen, before baking, to be baked at a later date. Serves 4.
