LUCY'S CHICKEN UPSIDE DOWN 
2/3 c. butter
2/3 c. all purpose flour
3 c. chicken broth
2 c. milk
1 tsp. salt
1/2 tsp. pepper
2 tbsp. lemon juice
2 1/2 c. cooked chicken, cut into 1/2 inch cubes
1 egg
2/3 c. milk
3 tbsp. vegetable oil
1 c. self rising cornmeal
1 tsp. sugar

Melt butter in a saucepan over medium heat. Add flour, stirring constantly. Gradually add chicken broth and milk; cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, lemon juice, and chicken. Pour mixture into a greased 13 x 9 x 2 inch baking dish. Combine egg and remaining ingredients, stirring well; pour over chicken. Bake at 350 degrees for 50-60 minutes or until golden brown.

Yields 6-8 servings.
