LOVE 'M LEMON BARS 
1 c. (2 sticks) butter, softened
1/4 tsp. salt
1/2 c. powdered sugar
2 c. all-purpose flour
4 eggs, slightly beaten
1 tbsp. grated lemon peels
5 tbsp. lemon juice
2 c. granulated sugar
1/4 c. all-purpose flour
Powdered sugar topping

Blend butter, salt, 1/2 cup powdered sugar and 2 cups flour; make soft dough. Press evenly into ungreased 9x13 pan until golden. Bake 15-20 minutes at 350 degrees.

Combine eggs, lemon peel, lemon juice, sugar and 1/4 cup flour; blend until smooth. Spread over baked crust. Reduce heat to 325 degrees. Bake 25 minutes until firm; cool. Dust with powdered sugar. Slice into bars.

VARIATIONS: Almond Amaretto - substitute amaretto liquor for lemon juice (5 tablespoons); sprinkle with almonds - no peels.

Cocoa, Key Lime - lime juice and peel (5 tablespoons lime and 1 tablespoon peel); top with cocoa.

OJ Bars - Orange juice (5 tablespoons) and 1 tablespoon peel. Topping (optional) - 2 ounces semi-sweet chocolate with 1/2 stick butter; use as glaze.
