PERSIMMON CAKE | |
1 c. persimmon 1 c. sugar 2 tbsp. butter 2 eggs 1 c. flour 1 tsp. cinnamon 1/2 tsp. baking powder 2 tsp. baking soda Nutmeg to taste 1 c. raisins 1/2 c. nuts, chopped Scoop persimmon pulp from skins, then add all ingredients and mix together. Place in a greased glass pyrex pan, preferably 1 with a hole in center. Bake for about 40 minutes at 350 degrees. Cool completely, then turn out on a plate and serve. |
