EASY BAKED MEATBALLS 
1 lb. ground beef
1 env. onion soup mix
1 egg
Bread crumbs, to desired consistency
1 tbsp. milk
Dash salt and pepper

Mix all ingredients together, roll into balls. Place in baking pan. Bake in preheated oven at 350 degrees for 1/2 hour. (Great for spaghetti, or just as is.)

I use RITZ crackers, broken up into crumbs as and alternative to bread crumbs or the store bought Italian Bread crumbs. And Worcestershire instead of milk. Using the RITZ cuts out having to add any salt (bc the salt is on the crackers) and I don't know why but it gives a much better taste as well. I got that from my Moms meatloaf recipe. Just use one whole sleeve of crackers at a time. Place the crackers in a large zip lock type bag and smash them up with your hands/fists or a rolling pin or roll a can of soup over the bag till you get the desired crumb size. (great stress relief too, lol) Try it ... you'll be pleasantly surprised!

For those of us with Celiac disease or other gluten intolerance, you can use 1/3 cup of hazelnut or almond flour instead of bread or cracker crumbs.

I added chopped onions and Italian seasoning and instead of bread crumbs I used the Premium Plus crackers. I made them HUGE so I cooked them a little extra longer (I prefer my food slightly on the dark side as I'm paranoid of killing the people I cook for, haha) Excellent recipe though thank you!!

I made this but added a little garlic salt and seasoning salt, and I must say it was delicious, the recipe its self made very nice textured meat balls! I used a onion gravy to smother them in as well. Will definitely be using this recipe again

Trying to switch it up a bit for a gluten free family member, I discovered that dehydrated potato flakes are a great substitute for the breadcrumbs. And obviously I have to watch the onion soup/spices for gluten but overall I like this recipe.

This is a super easy recipe. However, for a little bit of a change up, here's what I do: 1 lb ground beef or turkey, 1/2 cup quick oatmeal, 1 egg (slightly beaten), 2 tbsp. diced onion, salt and pepper, mix all together and form balls. Put meatballs into baking dish. Mix a can of tomato soup, 3/4 can water and a tablespoon of sugar or Splenda. Mix together and pour over meatballs. Spoon the soup mixture over any meatball that is showing and bake at 350°F for 40-45 minutes. I usually get maybe 8-10 meatballs depending on the size I make them.

Great recipe and really easy even for us seniors. But instead of onion soup I just added onion powder and oregano with 2 tsp. of Italian seasonings plus I baked them for 40 minutes before allowing them to cool before I freeze them. I make enough to last me all month.
