POTATO BAKE 
1 stick butter
6-8 med. potatoes
1 green pepper
1/2 red onion
1 sm. jar pimientos, drained
2-3 stalks celery

Peel and slice potatoes. Line a 2 quart casserole dish with foil. Cut pepper and onion into rings. Dice celery. Place two layers of potatoes, pepper, onion, pimiento and celery into foil lined dish. Place stick of butter on top of vegetables and seal top and sides of foil. Bake at 350 degrees for 1 hour. Cheese can be added on top the last 10 minutes, if desired.
