ZUCCHINI BARS WITH CARAMEL
FROSTING
 
3 cups all-purpose flour
1 1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. nutmeg
1/2 tsp. cloves
3/4 cup (1 1/2 sticks) butter
1 cup brown sugar
1/2 cup sugar
1 tsp. vanilla
2 eggs
2 cups zucchini
1/2 cup chopped walnuts
1/2 cup butterscotch chips or raisins

Sift together first 5 ingredients. Cream together next 5 ingredients. Combine both mixtures.

Gradually add 2 cups peeled and grated zucchini, 1/2 cup chopped walnuts and 1/2 cup butterscotch chips or raisins. Pour into greased and floured 10x15-inch pan.

Bake at 375°F for 20 to 25 minutes. Frost with Caramel Frosting, if desired.

Caramel Frosting:

1/2 cup (1 stick) butter
1 cup brown sugar
1/4 cup milk
powdered sugar

Boil first 3 ingredients for 2 minutes. Remove from heat and add enough powdered sugar to spread on cooled bars.
