HUSH PUPPIES 
1 beaten egg
1 c. buttermilk
1/2 c. finely chopped onion
1/4 c. water
1 3/4 c. cornmeal
1/2 c. flour
1 tbsp. sugar
2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
Shortening or cooking oil for frying

In small mixing bowl slightly beat egg with fork. Beat in buttermilk, onion and water; set aside. In large mixing bowl combine cornmeal, flour, sugar, baking powder, salt and soda. Make a well in center. Add egg mixture all at once. Stir just moistened. Batter will be lump. Drop by tablespoon into deep hot oil. Fry 2 minutes or until golden brown, turning once. Drain. Serve hot. Makes 24.
