EASY HAM BEAN SOUP | |
Good ham makes a real difference, I usually buy a ham for a meal, then have enough leftover for soup. The amount of all the ingredients are a little different every time I make this, it is so good on a cool, rainy night! 2 cups navy beans, soaked overnight 6 cups water bay leaf salt, to taste (I use about 3/4 tsp.) 1/2 tsp. pepper 1/2 tsp. cumin 1/2 tsp. oregano chopped, leftover ham pieces (about 2 cups) 2 or 3 potatoes, chopped into small pieces 1 cup chopped onion Drain and rinse soaked beans, add 6 cups water. Put in the seasonings and ham. Bring to boil, then cook on low for several hours, 3 to 5, til the beans are done. Add potatoes and onions, simmer on low til soft. We like them pretty soft, it thickens the soup. Submitted by: LL |
