PEPPERONI SKILLET CASSEROLE 
6-7 med. to lg. potatoes
1 pkg. pepperoni
1 tbsp. onion flakes (or 1/4 c. real onion, diced)
3 tbsp. oil
1 to 1 1/2 c. shredded Mozzarella cheese
1/2 c. pizza sauce (or less to taste)
Salt to taste
1/2 tsp. Italian seasoning
1/4 tsp. celery flakes (optional)

Heat oil in deep skillet, add fairly thin sliced potatoes, plus onion, celery flakes, salt and Italian seasoning. Cover and cook until potatoes are barely tender. Drizzle pizza sauce over potatoes, then layer pepperoni over sauce, then sprinkle Mozzarella cheese over pepperoni. Cover and cook only until cheese melts. Good served with salad and French bread.
