MEATY MEAT LOAF 
1 lb. ground beef
2 tbsp. dry onion soup mix
1/4 tsp. salt
5 oz. can (2/3 c.) evaporated milk
2 tbsp. firmly packed brown sugar
1/2 tsp. dry mustard
2 tbsp. catsup

In 1 or 1 1/2 quart (8 x 4 inch) glass loaf dish, combine first 4 ingredients; mix well. (Mixture will be very moist). Press evenly in dish. Combine remaining ingredients; spoon and spread over top of meat. Microwave covered on High 7 minutes or until done. Let stand 5 minutes before removing to serving platter and slicing. 3 to 4 servings.

TIPS:

TO MAKE AHEAD - prepare as directed, refrigerate 1 day or freeze up to 1 month. After refrigerating, microwave as directed; after freezing, microwave on High 8 minutes, let stand 5 minutes and microwave on High 5 more minutes.

Meat loaf may be microwaved covered in 1 quart glass casserole, by pushing meat way from center and inserting a small glass to form a tube. Microwave 6 minutes. Remove glass and drain juice before inverting meat loaf onto serving plate.

Since microwave ovens vary in power, you may need to adjust your cooking time.
