GRANNY'S BUTTERNUT SQUASH PIE 
2 cups butternut squash, mashed
1/2 cup (1 stick) butter, softened or melted
1/4 cup milk
1 1/2 cups sugar
1 egg, beaten
1/4 cup self rising flour
1 tsp. vanilla
2 unbaked pie shells

Peel and slice butternut squash and boil until tender. Mash butternut squash and put in large mixing bowl. Add butter while squash is warm, mixing slowly. Add sugar, egg, milk, flour and vanilla mixing well.No lumps. Pour into unbaked pie shells. Bake at 325°F for approximately 1 hour and 15 minutes.

Makes 2 pies.
